This may end up sounding odd to quite a few of you, but the biggest thing I am not willing to adapt to is the love of cheese. I mean, cheese is alright when it's cooked on something, and sometimes even when it's sprinkled on a salad, but just eating a hunk of cheese is not appetizing in the slightest. My Greek salad at lunch today, absolutely tasty. The cheese that came on top of it, not tasty at all. The part of this culture that I really enjoy and would love to adapt is the calm pace. While many Greeks do not appear calm while talking to one another, all you need to do is walk by a cafe, or even better, sit in a cafe and watch the people. They converse and eat and drink and converse some more. You feel as though you have been at the cafe a long time, yet the group of Greeks that arrived before you still seems nowhere near being done. I absolutely love that. I wish that we had a culture that acknowledges the importance of slowing down and enjoying the time you have without worrying about the next item on your schedule. When I get back, I certainly hope that I will remember this and make my dinners just a bit longer, allow my coffee dates to discuss that last topic, and to see that life will pass me by if I let it, so I better slow down and take it all in.
